Owning predictable scheduling is important. If you show a calm interest, regardless of the temperament with which you are endowed, your cat will feel secure. This is much more important in terms of behavior than mimicking.

Ingrained traits come from daily habits. Neurotic cats become chronically stressed if yelled at. Peaceful owners help impulsive cats learn to be calm and composed. I knew of a rescue cat that was terrified of raised voices. His whole attitude changed after his owner cultivated quiet communication.
Intentionally shape interactions. Reinforce calm behavior with treats throughout more peaceful times. If your cat is meowing at night for attention, ignore it. This will help your cat learn your boundaries. One of my clients with a demanding Siamese cat was able to stop nighttime disruptions by simply remaining silent.
Honor their intrinsic personality differences. Cantankerous cats won't suddenly become cuddly or affectionate because they are cared for. You can still try compatible activities -- perhaps even parallel play. Try to modify your expectations to honor the newly established comfort level; this way, you are building trust without forcing anything.
